L'arte dell'intaglio in Val Gardena risale al XVII secolo ed è un patrimonio culturale riconosciuto a livello mondiale. Nata inizialmente per la produzione di oggetti sacri destinati alle chiese, la tradizione si è evoluta, includendo soggetti profani e naturalistici, mantenendo sempre l'inconfondibile alta qualità esecutiva che contraddistingue il marchio Dolfi. L'uso sapiente del legno locale, come l'acero (utilizzato per le sculture di questa dimensione), e la trasmissione delle tecniche di intaglio di padre in figlio, definiscono ancora oggi questa scuola artistica unica. Le raffigurazioni della fauna selvatica, come il cervo, sono elementi classici dell'artigianato alpino e rappresentano un profondo legame con l'ambiente montano circostante.
